VEGAN EATS... The first time I ever had really good Thai food was at @obao_ny about 7 years ago. I fell in love with their Pad See Ew! But since becoming vegan I hate going to restaurants and asking them to veganize things just for me. So I decided to make it myself... I’ve never made Pad See Ew before but I wanted to try and re-create it without looking at a recipe and this was the delicious results. .
Here’s how I did it: .
•Broccoli •Chopped Ginger
•Diced Red Onion
•Flat Rice Noodles
•Fresh Basil and Cilantro •1 Navel Orange
•Coconut Brown Sugar
So I sautéed the broccoli in a separate pan with salt and pepper until soft and let rest. In a wok I added about 1/3 cup of Coconut Aminos and the fresh Juice of 1 Navel Orange. Also added a tablespoon of Coconut Brown Sugar and cooked on high until the mixture reduced and got a little thicker. Added in all the other ingredients including the Broccoli (except the lime) and sautéed for about 7 minutes until everything was soft. I squeezed the lime juice over it and tossed it a bit more. Then I plated it and added a touch Red Pepper Flake and Cilantro. .

A lil memory Monday for ya. .
When filmmaker Joe Castelo met Chef Paul he snapped this shot in June of 2015 when Paul first saw the oven. “What the f*¢% is this?” is written all over his face! He started cooking at 13, worked in kitchens around the world, played with a lot of fire, and was considered by Anthony Bourdain to have seen it all...(check out the link of the reel they did with Tom Colicchio and ZPZ in ABB profile)...but he had never seen anything like this.
Sure big bakeries, brick boxes, coal burners, wood fires what have you, yeah, but this thing was different. Perhaps because if it’s proximity to Manhattan? Maybe because it had remained untold, unpublished, and unknown outside of humble Hoboken despite its size and sheer strength...or maybe because he didn’t know how to use it.
Four years later, the fierce fire is his friend, Joe, Rocco, and their families have forged relationships far more than business, and feeding people from it fills them with warm fuzzies.
Whoudda thunk a coal oven from Hoboken would be just what this restless fella from Brooklyn with fire in his belly needed?
We’re glad they came together! .
Fork tender baby 🐙 for tonight’s paella, with local sausage from @jaxpicassos and wahoo my neighbor caught yesterday morning. Saffron rice, onions, capers, olives, roasted red peppers, cherry tomatoes etc.
