Enjoying a chicken bowl for a late lunch. Chicken, brown rice, black beans, corn, mixture of peppers, and a bit of cheese. Hope it’s good!
Perfect day to do some laps around the neighborhood with a little pit-stop at the driveway following each for some sandbag presses and lunges! Inspired by @kirkdewindtpt ‘s post several days back; running with a jacked up heart rate! My fitness level is strong right now, and looking forward to new challenges and heights this summer 💪🏻💪🏻

"But what's the reason for this post?" you ask... Well, today is National Drink Wine Day.⠀
Sounds like a pretty good excuse to break open a bottle tonight, right?⠀
Although, be honest. Are most night's National Drink Wine Day?⠀
Now, I'm not accusing you of alcoholism. I'm just saying that after a long, stressful day at work, a glass (or two) of red becomes your fall back plan.⠀
Ideas of hitting the gym and prepping healthy food get exchanged for El Vino and whatever you can find in the fridge.⠀
Cue feelings of guilt the next day as you're off track with those calories AGAIN.⠀
But here's the thing. You can lose the stubborn from around your midsection, tighten up the wobbly bits you're not a fan of, AND enjoy a drink at the same time.⠀
In fact, I've been helping people get lean and drunk for years.⠀
Trust me, you don't have to feel a failure every time you want to enjoy some of life's indulgences. It's ok. It's not a big deal.⠀
And the same goes for cake, pizza, and donuts too.⠀
Now you might be thinking I'm talking shit. And when it comes down to it, I'm going to give you a meal plan of dry chicken, limp broccoli, and rice like the cat's litter tray. But you're wrong.⠀

This morning I came across an article from Retired SEAL Commander Bill McRaven. He shared 10 key things to teach your kids for success.

Take this vibrant, delicious plant based bowl for #meatlessmonday
We have roasted garlic broccolini, beetroot, red peppers and Brussel sprouts! Served with hummus, it provides the protein and starchy carbs for this meal.
How I did this 👇🏼
Pre-heat oven to 180 C. I roasted all of the veg in one large tray. First prepare the beetroot. Bring water in a pot to the boil then add in beetroot, skin on. Allow to simmer and cook for a further 30 mins. Drain and plunge into cold water to cool beets down. Once cool, peel the skin off with your fingers. It should rub off easily. If you don’t want purple coloured hands, use latex gloves. Quarter and pop onto your tray. Wash the broccolini and also lay onto one section of your baking tray. Next prepare the Brussel sprouts. I tend to chop them in half so they caramelise. Next slice your red peppers into large rustic chunks. In a mortar and pestle, smash 2 garlic cloves skin still on, enough for it to releases the garlic juices. We want to steep our olive oil in the garlic only as small garlic pieces roasted will burn before veg is done. Add 1/4 cup oil and infuse for as long as you have, then drizzle as much oil as you need over the veg and mix through with your hands ensuring all is lightly coated with the garlic oil. Sprinkle over sea salt and a grating of black pepper before popping tray onto the top shelf in the oven and roasting for 30 mins.
I made a quick salsa verde to drizzle over this and it provides a sharp tangy contrast to the creamy hummus which I think works well. All you do is roughly chop parsley, mint, coriander and chives (or whatever herbs you have). Add 2 TSP white wine vinegar, 4 TSP oil, chopped capers, 1 TSP lemon juice and 1/2 tsp sea salt. Sprinkle over nuts and seeds for added nutrients.
