I actually meal prepped this spread yesterday because last night I celebrated Galentines with my favorite gal pals and I knew today was going to be spent recovering.
So reporting to you hungover from my bed, these are my bomb meals for the week:
1. Buffalo chicken wraps/stuffed sweet potato (wraps for Matt, SWP for me)
2. Shrimp taco bowls with rice, corn, black beans, fajita veggies, and pico
TIP: To keep the shrimp fresh and tasty, I am going to be cooking the shrimp the day of instead of prepping it all ahead of time. Everything else is prepped, just cook some shrimp, toss it in the bowl and it’s good to gooooo 👍🏽 I think this is super helpful when meal prepping things like seafood which can go bad quicker than other protein.

Avocado chicken and basil salad 🥗😍
1 medium tomato (cut into chunks)
1 medium sized Chicken Breast
1 small avocado (peeled and sliced)
2 table spoon olive oil (divided)
Fresh basil Lemon or lime (whatever you have handy) Salt and Pepper
Pan sear chicken with one table spoon olive oil with salt pepper and any spices you enjoy
Once chicken is cooked, chop. On a platter arrange chicken, avocado and tomatoes.
Drizzle with remainder olive oil and lime juice. Then salt, pepper and fresh basil.
Gym hair... don’t care! –
I for one am VERY guilty of this.. when I workout my hair is absolutely crazy and I could careless! Crazy hair means you put in some work! For instance when I’m about to go hard lifting I throw my hair up in a high pony or into an obscene pineapple at the top of my head and put my headphones in and that’s when you know sh*ts about to go down! I feel like this is my heavy lifting ritual do you have a ritual like mine? If so let me know if you do or have witnessed this or do this yourself! So I know I’m not alone with the obscene pineapple hair style 🍍 –
