There‘s quit the busy weekend lying ahead of me but I‘m really looking forward to it. Especially since it‘s my last real weekend here in Berlin (for now). 😱😭

I've been lazy and too busy to make food pictures lately but here's my avo toast from yesterday. Under vegan smokey cheese, spinach, blueberries and fresh mint there's dark bread called saaristolaisleipä which I bought from our kitchen at work. Today I'm not going to work cause I will go to hospital for a procedure where they try to numb my nerves. I hope it helps to get rid of this radiating pain I've had over a month now. I love mixing up raw and roasted (or in this case, pan-fried) vegetables to make a salad. This one has fried chickpeas for texture and protein and one of the most versatile sauces, chimichurri, for a huge hit of flavour. Does anyone else love a raw and cooked salad?

Today I’m saying CHEERS that it’s been just over 1 year that I decided to go for that online health coaching thing...aka the best thing I never knew I needed. Many probably thought I was kinda whackadoodle for adding another thing on my plate. But sometimes adding something that brings you so much passion & purpose actually brings you MORE balance.
And specifically today I’m celebrating a milestone in which I was able to help people every single month find real solutions to becoming healthier & happier. I get to pay forward the gift I felt like I was given in hopes it changes someone else’s life as much as it has mine.
And in full disclosure, in NO world would a nurse get rewarded a nearly paid for cruise (T-minus one month!) + all-inclusive vacay already set in stone for next year for helping others...but I have as a coach. Like whaaaa!? #isthisreallife
I sincerely hope you’ve found that ‘thing’ that gives you purpose & joy in life and if you haven’t, please don’t give up hope...don’t limit yourself to the possibility of something new...don’t doubt that you too are made for more.

Sweet ‘n Spicy Stuffed Japanese Sweet Potatoes with Black Beans, Pineapple Salsa and Cashew Sour Cream 🍠🍍🌶 _______________________________________________________
Wash and bake your sweet potatoes at 400 F (200 C) for 45 -50 min until fork tender.
In the meantime prepare salsa 🍍
2 cups fresh (or frozen) pineapple
2 jalapeños (seeded for less heat)
1 red bell pepper
1 small sweet or red onion
Juice of 1 lime (2 if very small or not very juicy)
1 tbsp date (or maple) syrup
1/2 tsp chili flakes (if you like it spicy 🌶) Salt and pepper to taste
Finely dice onion and add it to a bowl with some salt and the lime juice. (This helps with the pungency of raw onions)
Wash, seed and dice bell pepper and jalapeños.
Cut pineapple and avocado into small chunks.
Add date syrup, pepper, chili flakes to the onions and stir. Add the pineapple, peppers and avocado and gently toss to combine.
Cashew sour cream:
1 cup soaked cashews
1-2 tsp lemon juice
1 tsp apple cider vinegar
2-3 tbsp unsweetened plain oat milk
Salt to taste
Blend all ingredients until very smooth.
Refrigerate both until use!
When sweet potatoes are done, slice them open lengthwise and fill with black beans, lots of the delicious salsa and some cashew sour cream on top!
I’m such a creature of habit it can mess with my mind big time when I formed a habit of eating something daily and then I can’t. 😢 I’ve been having sliced bananas and dates for the last few days for lunch, today I only had 3 fresh bananas, 4 had gone yuck 🤢 even for me. I could have gone out and bought more, they’re always ripe here, however I’m trying to not waste time in my life and only buy produce when I leave the place (which is always daily. As every good fruit bat should I always have frozen bananas, so I decided to make blueberry nice cream, 😋 fighting the temptation to go to get my bananas. 🐒 I served my nice cream with mangoes, my 3 bananas and dates. 🥳 Looks like this “creature” maybe forming a new lunch habit!!!
