Another easy one for you to make this week that feels indulgent! It’s our Creamy Sweet Potato Noodle Bowls! •
* 4 salmon fillets (of about even size - we used @fish.fixe and you can save $10 off your first order with the code REALSIMPLEGOOD - will link below)
* 1 tsp smoked paprika
* 1 tsp garlic powder
* Pinch of sea salt and pepper
* 6 pieces bacon, diced
* 2 sweet potatoes, spiralized into noodles
* 3 cups greens (spinach or kale)
For the creamy sauce:
* 1/2 onion, roughly chopped
* 3 cloves garlic, minced (about 1 tbsp)
* 1 cup full fat coconut milk
* 1/4 tsp sea salt
* 1/4 tsp ground black pepper
1. Preheat oven to 400° Fahrenheit, line a baking sheet with parchment paper. Dice bacon and spiralize sweet potatoes.
2. In a large skillet over medium heat, cook diced bacon until crispy. Once crispy, place on a paper towel lined plate and set aside.
3. While bacon is cooking, place salmon fillets on baking sheet and season with the smoked paprika, garlic powder and a pinch each of salt and pepper. Place in the oven to bake for 15-20 until flaky with a fork. Cooking time will vary depending on the size of your fillets.
4. While the bacon is cooking, prep onion and garlic as noted above.
5. Once bacon is done and on a plate, make the creamy sauce. Place onions in the same skillet you cooked the bacon in over medium heat. Cook until softened, about 4-5 minutes.
6. Add coconut milk, minced garlic, salt and pepper. Stir to combine everything. Turn heat to low and simmer until the salmon has about 5 minutes left.
7. Heat back to medium, and add sweet potato noodles to the creamy sauce, cover and cook until they soften. Add spinach, and cook until it wilts. Add bacon and mix well.
8. Once salmon is done, remove from oven and serve over the sweet potato mixture and spoon extra sauce over everything.

We had salmon leftover from yesterday’s dinner and I had to put it to good use. I pan seared the salmon then broke it apart to make a salmon salad sandwich with roast red peppers, cherry tomatoes, fresh herbs, spices and Greek yogurt. Delicious!

Ok everyone tonight we have another Chef Joao❤️ treat. He started his new job at an amazing new seafood restaurant and he sent me this video of one of his creations. The dish is pan seared halibut over butternut squash puree and diced delicate squash and beurre blanc sauce. I don’t eat shrimp but I can still appreciate the beauty of a well made dish. Is he a talented chef or what 😍? Bon Appetit! 🛎

Another easy 10 minute lunch! 😍😋Baked wild salmon seasoned with olive oil, lemon and ground black pepper with a fried egg cooked in avocado oil, sautéed garlic mushrooms, spinach and half an avocado. I cooked the egg, spinach and mushrooms one after another in a non stick pan (no need to dirty up more dishes) while I baked the salmon on 400 for 10 minutes in my toaster oven. Easy peasy nourishing and delicious! Hope you’re having a great day!

Easiest, tastiest, cheapest meal prep around🙌🏼 especially if you use eggs, chicken, or chickpeas instead of the salmon!! People at work are always saying they are jealous of my meals and they don’t have time or energy to meal prep. Healthy eating does not have to be complicated or expensive and if you put a littleeee bit of effort in it’s really easy to eat nutritious and delicious meals every day! This meal came together in 15 minutes, and most of it was hands off so I could do other things while it cooked. Not including the salmon, this whole meal was about ONE DOLLAR to make. Adding two eggs would cost a quarter, chicken would cost 50 cents-$2 depending on if it’s organic, and serving with chickpea pasta instead of quinoa would set you back a dollar. Salmon may be a more expensive choice but places like aldi and Costco have options for $1-2 a serving! Grab a homemade baked good and you have an incredible for under $3!! Cannot beat that. .
I got a bag of stir fry veggies from the grocery store for $1.19, added a red onion I had, cooked up some quinoa and mixed it all together with soy sauce or coconut aminos. Then, I made an INCREDIBLE dressing out of lemon juice, more coconut aminos, @seedsofcollaboration tahini, lemon juice, and a spoonful of Greek yogurt. I mixed that up with the quinoa and veggies and drizzled the extra over top too!! Then I just added some baked sockeye salmon. I LOVE eating foods cold so will be eating this cold for lunch at work! If you can’t do cold and feel bad about stinking up the break room, this tastes great with chicken, eggs, or protein pasta as well😛
