Ellen’s Stardust Diner. This was the vegan option. Honestly, I was just slightly stunned - this is a central location in the middle of Manhattan! To make matters worse, the vegetarian option was tomato pasta which actually looked quite decent, but then they brought this for us - why?! The waiters didn’t seem to know what veganism was (even though there are four of us in our group of thirty) and actually made jokes at the table, which made us feel very uncomfortable. Two of the vegans in our group also had to send back their pasta as it wasn’t cooked properly (it had no sauce on it, just to add). Dessert was fruit. So that was fun.

Back home for a week, and we have the most busy days ahead. We are currently working on our vegan Mexican ebook, and organizing, design our website and recording episodes for @vedgetalk and @vedgetalkespanol , and making sure Herman stays clean and we pack everything we need for our next 3 months abroad!

Blood test back and I am thriving! When I started going vegan 6 years ago (best decision ever!), I really did a lot of research. Even I heard a lot of negative stories about vegans not getting enough nutrients, or how veganism is not a balanced diet. On the other hand there was a lot of positive reinforcement in the vegan community that being vegan is the best for your body. But I also wanted to make an informed decision and find it out for myself. And not only did I not have a flu or fever in almost 6 years, I also just got my blood results back (I asked my gp to do a general blood check to see if I was lacking anything, e.g. iron, calcium, thyroid, cholesterol, B12,…) and the results have come back showing that I am as fit and healthy as I could possibly hope and that I am, in fact thriving! I do supplement B12 though. And even though I bake the occasional cake and I am partial to alcohol (you gotta enjoy a little), I try to design my recipes with a balanced diet in mind and I practice what I preach by eating a diet that is full of variety and all food types. Strawberries and cream popcorn which I am VERY excited to try at some point.... so update again. I saw my best friend from an old hospital today which was AMAZING I love her so so much but today’s been rough man. I’ve struggled so much with food my doctors upped my fortisips from once a day to 4 TIMES A DAY FFS. I’m speaking to my dietician tomorrow to see about turning this around. I want to recover I really do, I was in absolute floods of tears earlier talking to a staff member about how I can’t keep living with my eating disorder. Also I know fortisips aren’t vegan but they’ve got nothing else in at the moment so I’ve got no choice 😭 it’s a lose-lose situation tbh. I hope you’re all well 😘

Dumplings with a sweet & sour cabbage-mushroom filling and chili broth on top 😍🌱
For the sweet & sour dumpling filling:⠀
Heat 2 tbsp canola oil in a pot over low-medium heat, added 1 small onion (chopped), 3 cloves of garlic (minced), a ca. 2 cm long piece of ginger (minced), 1/2 small cabbage head (finely chopped) and let everything cook for about 3-4 minutes before adding 200g chopped mushromms.⠀
Then, let everything cook for another minute and added 1 tsp salt, 1 1/2 tbsp. flour, 1 tbsp dark soy sauce, 1 tbsp apple cider vinegar and 2 tbsp brown sugar.⠀
Stir everything together and after ca. 5 minutes the filling was read.⠀
This recipe makes enough filling for ca. 26 dumplings.⠀
For the chili broth that goes on top of the steamed dumplings mix together 100ml vegetable broth, 1 tbsp canola oil and 1 tsp chili flakes. Enjoy!

Love this!! Chocolate Hazelnut Cake by @klaraslife ❤️🍫 200 g hazelnuts, ground
200 g all purpose flour
60 g dark chocolate pieces/chunks
200 ml of vegan milk (oat, rice, almond, soy)
50-100 g of coconut blossom sugar
150 g softened vegan butter
1 tbsp of baking soda
1 tbsp vinegar
1 packet of tartar baking powder
2 tbsp apple sauce
80 g dark chopped chocolate, optionally with hazelnut bits
3 tbsp oatmilk
Preheat the oven to 180 ° C/350F, grease and dust the baking tin/cake form. Mix flour, nuts, chocolate, baking powder, sugar, baking soda in a bowl.
Beat the butter with the hand mixer until creamy white (takes approx. 5 minutes) Add apple sauce and mix.
Add flour mixture, milk and vinegar and mix quickly. Don’t over mix. Pour the batter into the cake form and bake for about 40-45 minutes.
Toothpick sample before removing the cake from the oven.
Allow to cool in the tin for 5-10 Minutes before turning out onto a wire rack to cool completely.
Melt chocolate in the microwave or above the water bath. Allow to cool briefly and stir 3 tbsp oatmilk.
Pour over the cake and let it cool.
Slice to serve.
the extent to my meal planning these days is making sure i have delicious treats to snack on all week 😎 i don’t think i’m at a point in my journey with intuitive eating to full on prep every meal, it gives me anxiety for no apparent reason lol. i rather be able to eat what i’m craving in that moment i guess. anyhow. my lil treat for this week are chocolate dipped peanut butter pretzels !! sweet, salty, delicious, easy to make and super cute 🐹
1 cup creamy peanut butter
2 tbsp earth balance butter, softened
1/2 cup powdered sugar
1/3 cup coconut or brown sugar
1/2 tsp vanilla
1 bag enjoy life chocolate chips
- in a large bowl, combine the pb + softened butter until smooth. i used a hand mixer but to each his own lol.
- stir in powdered sugar, coconut or brown sugar, and vanilla until dough forms.
- roll the pb mixture into small balls (like 1”-2”). if it’s too sticky to handle, add more powdered sugar.
- place the pb ball in between two pretzels and place on a sheet lined w parchment paper.
- freeze for 15-20 min.
- pour the chocolate chips into a microwave safe bowl and heat for 30 second intervals, stirring between each interval, until they’re melted.
- dip the pretzel bites into the chocolate halfway, place back onto the baking sheet lined w parchment paper and refrigerate for 10-15min or when chocolate is firm!
