*********Parsnip Chip Recipe*******
I have to admit I am a massive chip fan! Love chips!! But instead of eating white potato chips all the time I like to mix it up a bit .
These parsnip chips are really yummy they’re basically just roast parsnips with polenta seasoning to crisp them up. Perfect during parsnip season - so cheap and deliciously sweet! .
♦️Preheat oven to 200
First make the polenta seasoning 📍4 tbsp dry polenta .
📍1 tbsp onion powder.
📍1tbsp garlic powder.
📍1 tsp dried rosemary.
📍1 tsp dried thyme.
📍Half tsp sea salt. 📍Half tsp black pepper.
⭐️Mix all ingredients together and store in airtight jar
⭐️Cut parsnips into chips (I usually find 2 large parsnips per person is enough) .
⭐️Coat with oil (I use @bionaorganic coconut oil for everything as it tasteless so you don’t get that coconut taste on everything!!) .
⭐️Liberally Season with polenta seasoning and mix well.
⭐️Spread out evenly on a baking tray so they have space between chips.
⭐️Bake them for 20 - 30 mins depending on how thick your chips are, turning them after about 15 mins.
Parsnips are high in potassium which helps to lower blood pressure so protecting the heart, vitamin c and folic acid which are involved in supporting your immune health and energy production .
They’re also a great source of soluble fibre feeding the good bacteria in your gut and promoting a healthy digestive system
And They taste so good you’ll want to eat them every day!! .
“Letting it in” simply requires a small turning of your attention to things that make you feel better. It can look like focusing on things you are grateful for, listing positive aspects, meditating or going for a walk out in nature, watching an uplifting show or video, reading an inspiration book, playing with your kids or pets, or even taking a nap. Sometimes it even looks like leaning into the resistant thoughts and emotions first by journaling, crying, venting to a trusted friend, being with it for a bit before you choose to do one of the above. It can look like so many things, it only needs to feel good or better than how you were feeling when you were stuck in resistant mode. ✨
This is how you tune into your own alignment, your own well-being, and I promise you, it is much more productive than sitting in a problem you are trying to solve from a resistant place, stuck in the insistence that something shouldn’t be this way, or dwelling on something that doesn’t feel good. Because once you are tuned into that flow of well-being you have access to everything you need to move through and forward, including allowing it to work itself out. In short, care about how you feel, strive to feel good as often as possible. And when you don’t, be easy with yourself and do what you gotta do to recover to that flow. 💗

What a gorgeous day it was today! Getting some gentle exercise at the weekend makes me feel so good. I kicked off the morning with a stretch class then went to the @yogific vegan yoga festival where I had lots of yummy treats like this cream cheese and Bailey's brownie. I also took some cake, sausage roll and a pasty home for later. I did a great yoga class and it was lovely to see people of all ages including quite a few children getting stuck in.
My mum was meant to do the class with me but she was sick so I went ahead and did it anyway. Don't be afraid to go it alone. It sometimes takes time to feel comfortable doing things alone but being in your own company is also a really special experience that I think everyone should do occasionally.

So, let’s talk about beauty! My ex-bf (thank god for this!) said to me when we where in Sri Lanka, “your hair is growing”(armpits/legs)We’ve been traveling through India & Sri Lanka for several weeks and I don’t like to shave.I was silent, and then I was like “yeah I have hair! Guess what?So do you! (except your head) and if I chose to wax is because I’m choosing to. It’s not for you or because of you. And then I realized I never thought about this actually. Why do we do all these things? To fit in some convention of beauty? I’ve plucked my eyebrows since the age of 14. Waxing same. I used to straighten my hair every Friday! All of these things had become automatic. I never really thought about them. Especially growing up in such a patriarchal society such as Colombia where everyone has a very particular idea of how women should look like, and behave. Thin enough, big boobs and butt, quiet, domestic, well groomed! A culture obsessed with objectifying women and making them look all the same. Well, I guess we can say we have these conventions pretty much everywhere still.I remember working as a model and not getting some jobs because my boobs were small. Most of my friends got boob jobs, to get more jobs, to feel more beautiful and more feminine.Thank God I didn’t do that! I refused. I lost plenty of jobs because of that. I think there is nothing bad about wanting to feel good about ourselves or about vanity. Vanity is a way of loving ourselves, whatever that means for us. But as long as we know why we are doing it and it doesn’t come from a place of fear or shame. If it’s not just because we want to fit in. Fit in with an idea of beauty. If I want to shave my legs, wear lipstick, no makeup, straighten my hair, pluck my eyebrows, be thin, it's my choice not his, or anyone else’s. I do it for myself. So I decided to stop plucking my eyebrows. I’m leaning more towards simplicity, doing less, becoming more natural, more me. I rarely wear makeup or straighten my hair. What do you think?
HOW TO SET BOUNDARIES, Part I
Here by popular request, let’s talk about one of my favorite topics: BOUNDARIES. I love boundaries, fam. They’ve been the single greatest contributor to my joy, freedom, and self-worth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here’s what I used to get wrong about boundaries: it’s not about shifting someone else’s behavior. I thought that when I set a boundary, I’d change them or how they treat me. No, no. Boundaries are about self-respect. It’s drawing a line around how I honor and stay true to myself, which is how people learn to treat me. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
For example, if I continually say “yes” when I really mean “no,” it’s likely because I’m valuing harmony and approval over self-worth and inner truth. People may then learn to rely on me to put their needs above my own, which is on me to shift. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Setting boundaries begins by knowing what they are. Here are three prompts to get started:
1. Values: What do I value? What is a non-negotiable in my life?
2. Needs: What do I need to experience that value?
3. Actions to Honor Me: What does it look like to honor that need? What happens if it’s not met?

For example, quality time is the most important value for me in relationships, which I communicated early on with @farhadini. He knows that if we don’t get deep connection time each week, I’m cranky and feel disconnected. That’s why we prioritize date night every Friday and turn off our phones. It’s a non-negotiable for me.
Creatively, I hate phone calls and meetings unless there’s a clear agenda and purpose. My email inbox also bogs me down so I have systems in place to support my flow, like an email autoresponder that sets expectations and only certain times and days I’ll take meetings.
Or my well-being. I used to work late nights and weekends, but it left me drained and dull. Weaving rest, play, and breaks into my days and weeks helps me to feel restored and vibrant. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
